SPINACH AND MUSHROOMS WITH TRUFFLE OIL

Ingredients

  • 2 tablespoons butter
  • 10 ounces mushrooms
  • 1 large shallot, chopped
  • 14 ounces spinach leaves
  • 2 tablespoons TRUFFLEMEN trufflee oil

Instructions

  1. Melt butter in large nonstick skillet over medium high heat.
  2. Add mushrooms and saute until brown and liquid evaporates, about 8 minutes.
  3. Add shallot and saute 2 minutes.
  4. Add spinach 1/3 at a time and allow each batch to wilt slightly before adding the next batch, about 2 minutes per batch.
  5. When all spinach is wilted and heated through, stir in true oil and season with salt & pepper.
